So this is one of our all-time favorite cakes! (my hubby is a chocoholic, and he even likes this cake too.) Make your favorite yellow cake recipe, let it cool. Cut into cubes. Meanwhile, cut up strawberries, add lemon juice, and some sugar-let it sit for at least 30 minutes so it can macerate: release it's juices, and get nice and sweet. *(you can also add lemon zest at this point) Mix pudding mix with 2 cups of milk, and refrigerate for at least 5-10 minutes or until set. Use 1 tub of coolwhip or try makin your own-It's so simple, and tastes so good. Whip up 1 cup of whipping cream (or heavy cream), add 1/4 cup sugar, and 1 tsp vanilla-mix on high speed for about 2 minutes or until soft firm peaks. It's the second time I've posted a video tutorial, and as I said on facebook, I feel like a total cheeseball makin it and hearing my own voice makes me really self-conscious, but I love my girls, even my son enough (yup I want him to know how to make all these things for his family someday too) to get past the cheeseballiness (sp?) LOL
