Cinco de Mayo

 
Wasn't planning on doing too much for Cinco de Mayo until I came across these cute colorful pinata cookies ( http://www.sheknows.com/food-and-recipes/articles/958083/cinco-de-mayo-pinata-cookies ) filled with mini m&ms that were pretty darn cute! I decided I wasn't going to do them bc it takes quite a bit of time-(I did some similar rainbow cookies for St. Patty's day), but I would do a version of it as seen below. . .
I absolutely love the colors bc they look just like this pinata I posted that I found online. I got to use my new Ateco food coloring gels for the first time. They are a lot more vibrant than the regular ones. Another shortcut was buying ready made sugar cookie dough-which was a mistake bc none of us really liked the taste or texture, which is a bummer bc it's our favorite homemade butter frosting. Oh well, at least we got to smash it with the cute little bat daddy made a long time ago and gave to Ethan. The girls wanted to break it like a real pinata and then we remembered about the little bat. Too bad I didnt get a picture of Ethan smashing it to pieces!! 

You can eat it as is, or cube it, shred it etc. . .we made Nachos out of it-added colby jack cheese and stuck it under the broiler for a minute or 2. Served it with avacado, olives, sour cream, salsa, refried beans and rice. Thanks to Maui Tacos-I am in love with their rice.
To stick with the mexican flag colors of red, white and green we had Sprite with Strawberries, rimmed with lime juice and sugar. Glad we got to use these left over Paper straws from St. Pattys day. I fell in love with those too!! Cheers!
Thanks to all my sweety pies for helping in the kitchen-I Love it when you are in the kitchen with Momma! We ended the night by watching Nacho Libre! Viva Mexico!!
